Grilled Watermelon and Feta Skewers


Today I'm switching things up and sharing an easy summer appetizer with you. There's something about the combination of sweet watermelon and salty feta cheese that tastes so good! Last weekend I was going to make a delicious watermelon and feta salad but at the last minute decided to put everything on a skewer and grill it. This easy watermelon and feta skewer appetizer was a hit, and I ended up making a few more and bringing them over to the neighbor's house where they were immediately gobbled up. 


Ingredients:

8 oz Feta cheese cubed
Small watermelon cubed
20 mint leaves
1/4 c olive oil
Balsamic glaze 
10 bamboo skewers (soaked in water)

Directions:

Turn on your grill to high heat.

Thread a piece of watermelon onto a skewer, followed by a chunk of feta. Repeat until there are 4 - 5 pieces of watermelon and 3 - 4 pieces of Feta on the skewer.

Brush all four sides of the skewers with olive oil.

Grill until seared on all four sides (about 1 minute per side).

Transfer to a serving plate and drizzle each skewer with balsamic glaze.

Add mint leaves to garnish.

Serve immediately.
