Cajun Chicken Pasta Salad

Cajun chicken pasta salad is one of my go-to recipes for a busy weeknight. It’s a nice change from a standard pasta dish, packs a little spice and is a cinch to make. 

~ Ingredients ~

In addition to the ingredients listed below, you will also need 1 box of rotini pasta, cooked and drained. Other add in options are sliced black olives, diced green onions and parmesan cheese for a garnish. The Heaven on Seven Cookbook is my favorite source for Caesar dressing and cajun seasoning recipes. Both are pantry essentials. 

~ Directions ~

In a large bowl combine all of the ingredients, including the pasta, and mix well. Refrigerate until ready to serve. That’s it! This recipe has also been a hit for potlucks and as a side for a cookouts! 


~ Caesar Dressing ~

1 anchovy fillet

1 tsp minced garlic

1 egg

1 cup olive oil

2 TBS parmesan cheese

2 tsp lemon juice

1 tsp lime juice

1 tsp water

1/8 tsp black pepper

1/8 tsp salt

1/8 tsp cajun seasoning (recipe below)

In a food processor, pulse the anchovy fillet and garlic. Add the egg and slowly add the olive oil. Finally add the parmesan cheese, lemon and lime juice, water, cajun seasoning, salt and pepper. Process until all ingredients are mixed. Refrigerate.

~ Cajun Seasoning ~

3 TBS Hungarian paprika

1 1/2 TBS Spanish paprika

5 tsp salt

1 1/4 tsp dried thyme

1 1/4 tsp dried oregano

1 tsp white pepper

1/2 tsp dried basil

1/2 tsp cayenne pepper

1/4 tsp black pepper

1/8 tsp garlic powder

1/8 tsp onion powder

Combine in a small bowl and mix. Store in airtight container.
