Appetizer with Watermelon & Feta

Easy Summer Appetizer

Today I’m switching things up and sharing an easy summer appetizer with watermelon with you. Something about the combination of sweet watermelon and salty feta cheese tastes so good! Last weekend I was going to make a delicious watermelon and feta salad but at the last minute decided to put everything on a skewer and grill it.

These easy watermelon and feta skewers are one of the best summer appetizers you can serve and are always a hit.  You can prepare this appetizer with watermelon ahead of time and keep it in the refrigerator until you are ready to grill and serve. These watermelon and feta skewers are perfect for a summer picnic or party. I always end up making a few extra to bring to a neighbor’s house to share, and they’re immediately gobbled up.

Grilled Watermelon and Feta Skewers

8 oz Feta cheese cubed

Small watermelon cubed

20 mint leaves

1/4 c olive oil

Balsamic glaze

10 bamboo skewers (soaked in water)

Watermelon Appetizer Instructions:

Turn on your grill to high heat. While it’s warming up, cut the watermelon into bite-sized squares. Then cube the feta cheese slightly smaller than the watermelon.

Thread a piece of watermelon onto a skewer, followed by a chunk of feta. Repeat until there are 4 – 5 pieces of watermelon and 3 – 4 pieces of Feta on the skewer.

Brush all four sides of the skewers with olive oil.

Grill until seared on all four sides (about 1 minute per side).

Transfer to a serving plate and drizzle each skewer with balsamic glaze.

Add mint leaves to garnish.

Serve immediately.
