Ingredients (serves 12)
12 slices of chiabatta bread
2 ripe peaches
12 slices prosciutto
Brush the chiabatta slices with olive oil and toast under the broiler or on a grill. Thinly slice the peaches.
On each slice of bread, spread the ricotta cheese then sprinkle with black pepper. Add a slice of prosciutto and drizzle with honey. Top with 2 or 3 sliced peaches.
For the outdoor concert, I prepped the ingredients and assembled when we got to our destination so the bread didn't get soggy.
