Easy Weeknight Dinner | Homemade Chipotle Style Bowls

Homemade chipotle bowls are one of my favorite go-to recipes for a busy weeknight. They are easy to make, healthy and you can swap out ingredients to your liking. Here's how to make your own at home...

Ground chicken, cooked and mixed with taco seasoning 
Brown rice
Romaine lettuce
Pico de gallo
Black beans
Chihuahua cheese
Chipotle sauce (recipe below)
Other additions: grilled chicken or steak, green onion, bell pepper, avocado

{Chipotle Sauce}
1/2 cup greek yogurt
1/2 cup mayo
2 Tbs
2 Tbs chipotle chile in adobo sauce
1 Tbs lime juice
1 clove minced garlic
1/4 tsp each salt and pepper
Mix ingredients together in a food processor and chill.

Build your bowl. Start with the rice and chicken then layer the remaining ingredients.
Drizzle with chipotle sauce.
